So this afternoon I tried making Christy's super easy lemon cookies that she mentions
here at the end of her post. Yeah, take one...not so good! I think I put down too big of spoonfuls this time. The cookies were mostly dough when I pulled them out of the oven. So to the store tomorrow for trial number two. At least I didn't frost them! No added waste! And I definately did enjoy sampling the dough as I mixed them. I agree. I will not be making these often either...to much potential for more weight gain. And that won't help since I'm trying for the other direction.
I did get my fluffy lime pie made the other day. Very yummy and super easy. I made it from a Bisquick recipe where it had me make the crust. But I almost think a graham crust would be better.
Beat 1 can (14oz.) sweetened condensed milk with 1/2 cup lime or key lime juice in large bowl with electric mixer on medium until smooth and thickened. Fold in 1 container (8oz.) whipped topping and 1 TBSP grated lime peel. Cover and refrigerate 2 hours or until set. Garnish with lime slices if like.

Yeah, you have to measure out those lemon cookies by teaspoons. They end up being pretty small which I think contributes to me wanting to eat a dozen of them at a single sitting :p You can make them even more lemony by putting two tablespoons of lemon juice in the 1/2 cup measuring cup, and then adding the oil to make 1/2 cup. I've tried these with strawberry cake mix and frosting, but the lemon is just way better.
I finally got Lee to burn your Last Unicorn CD and the cherry blossom pictures so I'll mail that as soon as I can find something to send it in.
yeah i used a regular eating spoon like most recipes call for.
